3 medium-sized potatoes, peeled and grated
1 small onion, finely chopped
2 tablespoons all-purpose flour
1 tablespoon cornstarch
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley
2 tablespoons vegetable oil
In a large mixing bowl, combine the grated potatoes and chopped onions.
Add the all-purpose flour, cornstarch, baking powder, salt, black pepper, and chopped parsley to the bowl. Mix well until all ingredients are combined.
Heat a large skillet over medium heat and add 1 tablespoon of vegetable oil to the pan.
Using a 1/4 cup measuring cup, scoop the potato mixture into the hot pan and press down with a spatula to flatten.
Cook the pancakes for 3-4 minutes on each side, or until they are crispy and golden brown.
Repeat the process until all of the potato mixture has been used, adding more vegetable oil to the pan as needed.
Serve the pancakes hot with your favorite vegan toppings such as vegan sour cream, chives, or applesauce.
