CHICKEN KABOBS

Here’s a simple and delicious recipe for Keto Chicken Kabobs that’s perfect for a low-carb meal!

Ingredients:

For the Chicken Marinade:

  • 1 lb (450g) boneless, skinless chicken breasts (cut into bite-sized cubes)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)

For the Vegetables:

  • 1 bell pepper (cut into chunks)
  • 1 medium zucchini (sliced into thick rounds)
  • 1 red onion (cut into chunks)
  • 8-10 cherry tomatoes

Instructions:

  1. Prepare the Marinade: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Stir well.
  2. Marinate the Chicken: Add the chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for better flavor).
  3. Prepare the Vegetables: While the chicken is marinating, cut your vegetables into chunks. You can use other veggies like mushrooms, cucumbers, or even small pieces of cauliflower.
  4. Skewer the Ingredients: Thread the marinated chicken, bell pepper, zucchini, onion, and cherry tomatoes onto skewers, alternating the pieces to create a balanced mix of chicken and vegetables.
  5. Preheat the Grill: Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for about 15 minutes before grilling to prevent burning.
  6. Grill the Kabobs: Place the skewers on the grill and cook for about 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked.
  7. Serve: Once done, remove the kabobs from the grill and let them rest for a couple of minutes before serving. Garnish with fresh chopped parsley if desired.

Tips:

  • If you don’t have a grill, you can also cook these kabobs on a stovetop grill pan or in the oven at 400°F (200°C) for 20-25 minutes, turning halfway through.
  • Feel free to use different low-carb veggies, such as mushrooms or broccoli, to suit your preferences.
