Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon vegetable oil
  • 1 green onion, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix together soy sauce, honey or brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger to create the marinade.
    • Place the chicken thighs in a resealable plastic bag or a shallow dish and pour half of the marinade over the chicken. Reserve the other half for later.
    • Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes, or ideally, marinate overnight for more flavor.
  2. Cooking:
    • Preheat your oven to 400°F (200°C).
    • Heat vegetable oil in an oven-safe skillet over medium-high heat.
    • Remove the chicken from the marinade, allowing excess marinade to drip off, and place the chicken thighs skin side down in the hot skillet. Sear for about 3-4 minutes until the skin is golden brown.
  3. Bake:
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken thighs are cooked through. You can baste the chicken with the reserved marinade halfway through the baking time for extra flavor.
  4. Garnish and Serve:
    • Once the chicken is cooked, remove it from the oven.
    • Garnish with chopped green onions and sesame seeds (if using).
    • Serve the soy sauce chicken thighs over rice or with your favorite side dishes.
