Ingredients:
- 4 bone-in, skin-on chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon vegetable oil
- 1 green onion, chopped (for garnish)
- Sesame seeds (optional, for garnish)
Instructions:
- Marinate the Chicken:
- In a bowl, mix together soy sauce, honey or brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger to create the marinade.
- Place the chicken thighs in a resealable plastic bag or a shallow dish and pour half of the marinade over the chicken. Reserve the other half for later.
- Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes, or ideally, marinate overnight for more flavor.
- Cooking:
- Preheat your oven to 400°F (200°C).
- Heat vegetable oil in an oven-safe skillet over medium-high heat.
- Remove the chicken from the marinade, allowing excess marinade to drip off, and place the chicken thighs skin side down in the hot skillet. Sear for about 3-4 minutes until the skin is golden brown.
- Bake:
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken thighs are cooked through. You can baste the chicken with the reserved marinade halfway through the baking time for extra flavor.
- Garnish and Serve:
- Once the chicken is cooked, remove it from the oven.
- Garnish with chopped green onions and sesame seeds (if using).
- Serve the soy sauce chicken thighs over rice or with your favorite side dishes.
