Chick’n’ Breasts

Ingredients
1 cup Chickpeas
1 cup Vital Wheat Gluten
2/3 cup Chickpea Flour
1/2 to 3/4 water
Salt/Pepper to taste
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
2 Teaspoons Poultry Seasoning
Mix all of the above in a food processor until mixed thoroughly. It will be crumbly, but will stick together. Dump out mix, and knead a few times. Roll into a log shape and cut into 6 equal pieces. Shape into oval or round shape about 1/4 inch or less thick.
After mixture has been shaped add to boiling water and boil 20 – 30 minutes.
For boiling water.
5 cups water to 2 Teaspoons vegan chicken bouillon.
After cooking and cooled. Place in refrigerator overnight. The next day cook as you would any chicken breast. You can grill them, marinate them, possibilities are endless.
I make batches and put two pieces together in a baggie and freeze until needed.
Enjoy! (This photo is before boiling) one other note …Vital Wheat Gluten is quite sticky to clean. Be careful of getting on clothes. To clean my food processor I soak it then use my hands to scrape off sides of the processor. It works pretty well this way
