VEGAN BREAD PUDDING

VEGAN BREAD PUDDING

Ingredients:
4 cups cubed day-old bread (use a vegan bread such as sourdough or whole wheat)
2 cups unsweetened almond milk (or any other plant-based milk of your choice)
1/2 cup brown sugar (or any other vegan sweetener of your choice)
1/4 cup melted coconut oil (or any other plant-based oil of your choice)
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup raisins or other dried fruit (optional)
Instructions:
Preheat your oven to 350°F (180°C) and grease a baking dish.
In a large bowl, combine the almond milk, brown sugar, melted coconut oil, vanilla extract, cinnamon, and nutmeg. Whisk together until well combined.
Add the cubed bread to the bowl with the liquid mixture, and gently toss until all the bread pieces are coated with the liquid.
If desired, stir in raisins or other dried fruit.
Let the mixture sit for about 10 minutes, allowing the bread to soak up the liquid.
Pour the bread mixture into the greased baking dish, spreading it out evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pudding is set.
Remove from the oven and let it cool for a few minutes before serving.
Optional: serve warm with a dollop of vegan whipped cream or a drizzle of maple syrup on top for added sweetness
