Chickpea curry with fried cabbage
I got the chickpea curry recipe from YouTube, but I changed up a few things.
Chickpea curry:
First, I sautéed some onions, garlic, and ginger in some grape seed oil. Next, I added the spices to it: cumin, curry, turmeric, oregano, ground mustard powder, chili powder, black pepper, garam masala, and salt. Then, I added the chickpeas and roman tomatoes to sauté for a few minutes. I added some homemade walnut milk & some water, but you can use any nut milk you want or even coconut milk. I used chickpea flour mixed with water to thicken it up. Then I added the chopped spinach and cilantro. I don’t have exact measurements, I just eyeball everything and add more of something when necessary.
Fried cabbage:
Cut one head of cabbage. Add grapeseed oil to a pan. Add your cabbage along with your bell peppers (I used green and red). Add some salt, black pepper, coconut aminos or liquid aminos, and whatever other seasonings you may like. Cook until your liking.
