Vegan hamburger helper

Ingredients:
1 pound of vegan ground beef (e.g., Beyond Meat, Impossible Foods)
1 onion, chopped
2 cloves of garlic, minced
2 cups of vegetable broth
1 1/2 cups of elbow macaroni
1 1/2 cups of vegan shredded cheddar cheese
1 teaspoon of smoked paprika
1 teaspoon of dried oregano
Salt and black pepper to taste
Chopped fresh parsley for garnish
Instructions:
In a large skillet, cook the vegan ground beef, onion, and garlic over medium heat until the onions are translucent and the vegan ground beef is browned.
Add the vegetable broth, macaroni, smoked paprika, oregano, salt, and black pepper. Stir well and bring the mixture to a boil.
Reduce the heat to low and cover the skillet with a lid. Simmer for about 10-12 minutes or until the macaroni is cooked and most of the liquid has been absorbed.
Remove the skillet from the heat and stir in the vegan shredded cheddar cheese until it’s melted and creamy.
Garnish with chopped fresh parsley and serve hot.
