Chocolate pizzelle

Chocolate pizzelle

Ingredients:

  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sweetener (like Stevia or any sugar substitute with zero or low SmartPoints)
  • 1 teaspoon baking powder
  • Pinch of salt
  • Cooking spray

Instructions:

  1. In a large bowl, whisk together eggs, applesauce, and vanilla extract.
  2. In a separate bowl, sift together flour, cocoa powder, baking powder, and a pinch of salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until well combined. The batter should be thick and smooth.
  4. Preheat your pizzelle maker according to the manufacturer’s instructions.
  5. Lightly coat the pizzelle iron with cooking spray.
  6. Drop a tablespoon of batter onto the center of each pizzelle grid. Close the lid and cook until the pizzelles are set and lightly browned.
  7. Carefully remove the pizzelles from the iron and place them on a wire rack to cool.
  8. Repeat the process with the remaining batter.
  9. Allow the pizzelles to cool completely before serving.
