Biscuits are so easy to make and such fun. Fills the house with an adorable smell too.
125g / 5oz Self Raising Flour
50g / 2oz Ground Almonds
pinch salt
50g / 2oz Soft Brown Sugar
50g / 2oz Desiccated Coconut
100g / 4oz non-dairy margarine
2-4 drops Almond Extract
1) Place all the ingredients into a mixing bowl and with your fingers rub and massage it all together to make a very sticky dough.
2) On a floured surface roll out the dough very thinly. Treat it gently and keep well floured. Cut out rounds and place in a baking sheet with a layer of baking paper.
3) You can keep pressing the left-over dough together and re-rolling to cut further biscuits out as unlike pastry, it doesn’t become hard with handling. Use up all the dough.
4) Place on middle shelf in an oven at 170’C for 10-12 minutes, until golden.
I like to melt some vegan chocolate and drizzle it over as a finishing touch.
