Ingredients:
1 can chickpeas
1 can coconut milk
1 cup spinach leaves
1 onion, chopped
2 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 tablespoon oil
Salt to taste
Instructions:
Heat oil in a pan and sauté onion, garlic and ginger till onions are translucent.
Add cumin powder, coriander powder, turmeric powder, and red chili powder to the pan and cook for 1-2 minutes.
Add chickpeas and coconut milk to the pan and let it simmer for 10-15 minutes.
Add spinach leaves and cook until they wilt.
Serve hot with white rice.
King Oyster Mushroom Recipe:
Ingredients:
2 king oyster mushrooms, sliced
1 tablespoon oil
Salt to taste
Instructions:
Heat oil in a pan and add sliced king oyster mushrooms.
Cook for 5-7 minutes or until they turn golden brown.
Add salt to taste and stir well.
Serve hot with coconut spinach chickpea curry and white rice.
