Easy Keto Lemon Cream by Renato lopes

Easy Keto  Lemon  Cream Fool is a simple to make, low carb treat, which tastes like having a lemon cream pie in a glass.

Ingredients:

  • Cream cheese softened 1/2 cup
  • Whipping cream 1 cup
  • Keto-friendly sugar/ powdered erythritol1/2 cup
  • salt
  • Fresh lemon juice 1/4 cup
  • Zest of 2 lemons
  • vanilla extract 1 tsp.

Instructions:

  1. Take a chilled bowl, pour the whipping cream into it, and then whip it until a stiff peak forms to create a light and velvet touch.
  2. In the other bowl, add powdered sugar and the softened cream cheese and blend until well mixed.
  3. Now add vanilla extract, lemon zest, a pinch of salt, and fresh lemon juice to the mixture and mix them well.
  4. Now add the whipped cream to the lemon base and then fold it gently until well combined.
  5. Take a glass and layer the lemon cream mixture in an even manner.
  6. Keep the fool in the fridge and allow it to cool.
  7. Garnish the delight with lemon zest or fresh mint leaves.
  8. The refreshing delight is ready to be served.

INGREDIENTS

  • ½ cup heavy cream
  • ¼ cup low carb granular sweetener
  • ½ teaspoon vanilla extract
  • ½ cup sugar-free keto lemon curd divided

INSTRUCTIONS

  • In a stand mixer or large bowl with an electric hand mixer, add heavy whipping cream. Beat on high until firm peaks form, and when you lift the beater, the cream sticks and does not fall off (can take 4 to 6 minutes).

Add vanilla and turn the mixer to medium, and slowly add granulated sweetener a little at a time until blended and the whipped cream is thicker like a frosting. Turn off the mixer.

Add 3 tbsps of the lemon curd and gently fold into the whipped cream mixture.

In 2 dessert glasses or shot glasses add 1 tablespoon of the remaining lemon curd to the bottom of the glass.Add 2 tablespoon of whipped lemon mixture on top of the lemon curd layer.

Repeat layers of lemon curd and whipped cream until both lemon curd and whipped cream are used. Serve.
