Ingredients
* 4Tbls butter
* 1/2 cup unsweetened natural creamy peanut butter
* 5 Tbls powdered swerve
* 2 Tbls cocoa powder
* 1 1/4 cup unsweetened coconut
Instructions
1. Line a cookie sheet with parchment paper
2. In a large microwave-safe bowl, add butter, peanut butter and powdered swerve.
Microwave at 30 second intervals, stirring with a whisk in between, until everything is evenly mixed and smooth. The butter should be completely melted.
3. Add in cocoa powder and whisk until batter is smooth.
4. Add coconut. Mix and stir until evenly mixed.
5. Using a 1 1/2 Tbls cookie scoop, scoop batter and place on cookie sheet, spacing 2 inches apart. Flatten slightly
6. Place in frig or freezer until firm.
7. Enjoy.
