Fried eggs, cheese grits & shrimp

Ingredients for Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • Fresh lemon wedges for serving

Ingredients for Cheese Grits:

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste

Ingredients for Fried Eggs:

  • 4 large eggs
  • 2 tablespoons butter
  • Salt and black pepper to taste

Instructions for Shrimp:

  1. In a skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet and sprinkle with paprika, salt, black pepper, and cayenne pepper (if using). Cook the shrimp for 2-3 minutes per side until they turn pink and opaque.
  3. Squeeze fresh lemon juice over the cooked shrimp and toss them gently in the skillet.
  4. Remove the skillet from heat and set aside while you prepare the grits and eggs.

Instructions for Cheese Grits:

  1. In a medium saucepan, bring the water to a boil. Gradually whisk in the grits and reduce the heat to low.
  2. Cook the grits for about 20-25 minutes, stirring occasionally, until they are thick and creamy.
  3. Remove the saucepan from heat and stir in the shredded cheddar cheese and butter until melted and well combined. Season with salt and black pepper to taste.

Instructions for Fried Eggs:

  1. Heat a non-stick skillet over medium heat and melt the butter.
  2. Crack the eggs into the skillet, one at a time, taking care not to break the yolks. Season with salt and black pepper.
  3. Cook the eggs for about 2-3 minutes until the whites are set but the yolks are still slightly runny. If you prefer your eggs well-done, cook them for an additional minute.

Assembly:

  1. Spoon a generous serving of cheese grits onto each plate.
  2. Top the grits with a portion of the sautéed shrimp.
  3. In the same skillet used for the shrimp, melt additional butter and fry the eggs.
  4. Place a fried egg on top of the shrimp and grits on each plate.
  5. Garnish with additional black pepper or herbs if desired.

Serve the Fried Eggs, Cheese Grits, and Shrimp dish while it’s still hot and enjoy the combination of flavors.
