Healthy Cajun Bowl Meal Prep

Ingredients:

For Cajun Chicken:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

For Quinoa:

  • 1 cup quinoa, rinsed
  • 2 cups water or low-sodium chicken broth
  • Salt to taste

For Vegetables:

  • 2 bell peppers, sliced (any color)
  • 1 large zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 tablespoon olive oil
  • Cajun seasoning to taste
  • Salt and black pepper to taste

Additional Toppings:

  • Avocado slices
  • Fresh cilantro, chopped
  • Greek yogurt or sour cream (optional)

Instructions:

Cajun Chicken:

  1. Season Chicken:
    • In a bowl, combine chicken pieces with olive oil, Cajun seasoning, garlic powder, salt, and black pepper. Toss until the chicken is evenly coated.
  2. Cook Chicken:
    • In a skillet over medium-high heat, cook the Cajun-seasoned chicken until fully cooked and slightly browned. Set aside.

Quinoa:

  1. Cook Quinoa:
    • In a medium saucepan, combine quinoa, water (or chicken broth), and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork.

Vegetables:

  1. Preheat Oven:
    • Preheat the oven to 400°F (200°C).
  2. Prepare Vegetables:
    • On a baking sheet, toss sliced bell peppers, zucchini, cherry tomatoes, and red onion with olive oil, Cajun seasoning, salt, and black pepper.
  3. Roast Vegetables:
    • Roast the vegetables in the preheated oven for about 20-25 minutes or until they are tender and slightly caramelized.

Assemble Bowls:

  1. Divide Ingredients:
    • In meal prep containers, divide cooked quinoa, Cajun chicken, and roasted vegetables.
  2. Add Toppings:
    • Top each bowl with avocado slices and a sprinkle of fresh cilantro. Add a dollop of Greek yogurt or sour cream if desired.
  3. Store and Reheat:
    • Store the meal prep bowls in the refrigerator. When ready to eat, reheat in the microwave until heated through.
