HEALTHY TACO PIZZA

Ingredients:

For the Cauliflower Crust:

  • 1 medium-sized cauliflower head, grated or processed into rice-sized pieces
  • 1 egg
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Toppings:

  • 1/2 lb lean ground turkey or chicken
  • 1 packet taco seasoning (low-sodium)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes
  • 1/2 cup diced bell peppers (assorted colors)
  • 1/2 cup shredded lettuce
  • 1/4 cup sliced black olives
  • 1 cup shredded cheddar cheese

Optional Garnishes:

  • Fresh cilantro, chopped
  • Avocado slices
  • Greek yogurt or light sour cream

Instructions:

For the Cauliflower Crust:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place the grated cauliflower in a microwave-safe bowl and microwave for 5 minutes. Let it cool.
  3. Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a bowl, combine the cauliflower, egg, shredded mozzarella, oregano, garlic powder, salt, and pepper. Mix well.
  5. Spread the cauliflower mixture onto the prepared baking sheet, shaping it into a round or rectangular crust.
  6. Bake for 12-15 minutes or until the crust is golden and set.

For the Toppings:

  1. While the crust is baking, cook the ground turkey or chicken in a skillet over medium heat until browned.
  2. Stir in the taco seasoning and cook according to the packet instructions.
  3. Assemble the pizza by spreading the seasoned meat over the cauliflower crust.
  4. Add black beans, corn, diced tomatoes, diced bell peppers, shredded lettuce, sliced black olives, and shredded cheddar cheese on top.
  5. Return the pizza to the oven and bake for an additional 10-12 minutes or until the cheese is melted and bubbly.

Optional Garnishes:

  1. Remove the pizza from the oven and let it cool for a few minutes.
  2. Garnish with chopped fresh cilantro, avocado slices, and a dollop of Greek yogurt or light sour cream.
  3. Slice and serve your healthy taco pizza!
