Homemade Black Bean Burgers

Ingredients:
1 cup cooked black beans
1/2 cup cooked purple rice
1/2 cup cooked quinoa
1/2 cup peas (fresh or frozen)
1/2 cup grated carrots
1/4 cup diced onion
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon tomato paste
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
1/4 cup breadcrumbs or oat flour
1 tablespoon olive oil (for cooking)
Instructions:
In a large mixing bowl, mash the black beans until mostly smooth. You can leave a few whole beans for texture if desired.
Add cooked purple rice, cooked quinoa, peas, grated carrots, diced onion, minced garlic, soy sauce, tomato paste, ground cumin, smoked paprika, salt, and pepper to the mashed black beans. Mix well until all ingredients are evenly combined.
Gradually add breadcrumbs or oat flour to the mixture until it becomes firm enough to form into patties. Start with 1/4 cup and add more as needed.
Divide the mixture into equal portions and shape them into burger patties.
Heat olive oil in a skillet over medium heat. Once hot, add the burger patties and cook for about 4-5 minutes on each side, or until they are golden brown and crispy on the outside.
Serve the black bean burgers on buns with your favorite toppings such as lettuce, tomato, avocado, and sauce of your choice.
