Homemade cinnamon rolls

Ingredients:
For the Dough:
1 cup unsweetened almond milk (or any plant-based milk)
1/4 cup vegan butter, melted
1 packet (2 1/4 teaspoons) active dry yeast
1/4 cup granulated sugar
3 1/2 cups all-purpose flour (plus more for dusting)
1/2 teaspoon salt
For the Filling:
1/3 cup vegan butter, softened
1/2 cup packed brown sugar
2 tablespoons ground cinnamon
For the Glaze:
1 cup powdered sugar
1-2 tablespoons unsweetened almond milk (or any plant-based milk)
1/2 teaspoon vanilla extract
Instructions:
Activate the yeast: In a small saucepan, heat the almond milk until warm but not boiling. Transfer to a mixing bowl and sprinkle the yeast over the warm milk. Let it sit for 5-10 minutes until frothy.
Make the dough: Add melted vegan butter and sugar to the yeast mixture and stir to combine. Add the flour and salt, and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare the filling: In a small bowl, mix together the softened vegan butter, brown sugar, and ground cinnamon until well combined.
Roll out the dough: After the dough has doubled in size, punch it down and transfer it to a floured surface. Roll it out into a rectangle, about 1/4 inch thick.
Fill and roll the dough: Spread the cinnamon sugar filling evenly over the rolled-out dough. Starting from one long edge, tightly roll the dough into a log. Cut the log into 12 equal-sized rolls.
Bake the cinnamon rolls: Place the rolls in a greased baking dish, leaving a little space between each roll. Cover the dish with a kitchen towel and let the rolls rise for another 30 minutes. Preheat the oven to 350°F (175°C). Once the rolls have risen, bake them in the preheated oven for 25-30 minutes, or until golden brown.
Make the glaze: While the rolls are baking, prepare the glaze by whisking together powdered sugar, almond milk, and vanilla extract in a small bowl until smooth.
Glaze the cinnamon rolls: Once the cinnamon rolls are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the glaze over the warm rolls.
