HomeMade Zero Points Chicken Chili

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 onion, diced
  • 2 bell peppers (any color), diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, cilantro, lime wedges

Instructions:

  1. Cook Chicken: In a large pot over medium heat, cook the diced chicken until browned and cooked through.
  2. Add Vegetables: Add diced onions, bell peppers, and minced garlic to the pot. Sauté until vegetables are softened.
  3. Combine Ingredients: Add black beans, kidney beans, diced tomatoes (with juices), tomato sauce, corn, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir well to combine.
  4. Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 20-30 minutes to allow flavors to meld.
  5. Adjust Seasoning: Taste and adjust the seasoning if needed. If you prefer a spicier chili, you can add cayenne pepper or hot sauce.
  6. Serve: Ladle the chicken chili into bowls. Garnish with chopped green onions, cilantro, and a squeeze of lime if desired.
