Zero Point Strawberry ice Cream

Ingredients:

  • 4 cups fresh strawberries, hulled and halved
  • 1 cup fat-free Greek yogurt
  • 1-2 tablespoons lemon juice (optional, for added brightness)
  • Sweetener to taste (optional, depending on the sweetness of your strawberries)
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Prepare Strawberries: Wash and hull the strawberries. Cut them in half.
  2. Freeze Strawberries: Place the halved strawberries in a single layer on a baking sheet lined with parchment paper. Freeze for at least 2-3 hours or until solid.
  3. Blend Ingredients: In a high-powered blender or food processor, combine the frozen strawberries, fat-free Greek yogurt, lemon juice (if using), sweetener (if needed), and vanilla extract. Blend until smooth and creamy.
  4. Taste and Adjust: Taste the mixture and adjust sweetness if necessary by adding more sweetener or lemon juice.
  5. Serve Immediately or Freeze: You can enjoy the strawberry ice cream immediately for a soft-serve consistency, or transfer it to a container and freeze for a couple of hours for a firmer texture.
