Impossible Jackfruit Cheesesteak Sandwich

Me and Jackfruit are at it again, and this is the best yet. I decided to try a Jackfruit Cheesesteak sandwhich, so I prepared the jackfruit, and sauteed with Sweet Vidalia Onions, green & red bell peppers, sweet cherry peppers, and Shiitake mushrooms. In the fridge I had an “impossible patty” that I needed to use, so I put it in as well, so I call it my “Impossible Jackfruit Cheesesteak Sandwich”. I seasoned with coarse black pepper, garlic powder, smoked paprika, liquid smoke, zesty blend and Liquid Aminos.
Jackfruit Preparation: I use canned Jackfruit. I break it up using my hands and a potato masher. I let it drain, then I put in the oven for about 20 minutes on 400°; this is to dry it out and to begin the browning process. Then I put it in the pan with the other ingredients. You really have to cook the jackfruit down for awhile to get the texture you want, and season liberally.
The cheese sauce was made with Violife Mozzarella Shreds, garlic and herb cream cheese, melt butter, and nutritional yeast. It melted nicely. On the bun was vegan mayo and shredded lettuce.
This was delicious. I almost chewed my fingers off eating it.
