Ingredients

  • For the Cake:
    • 2 cups almond flour
    • ¼ cup coconut flour
    • 1 cup unsalted butter, softened
    • 1 cup powdered erythritol or monk fruit sweetener
    • 4 large eggs, room temperature
    • 1 tbsp vanilla extract
    • ½ cup sour cream
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ¼ tsp salt
  • For the Butter Sauce:
    • ¼ cup unsalted butter
    • ¼ cup powdered erythritol or monk fruit sweetener
    • 1 tbsp water
    • 1 tsp vanilla extract

Instructions

  1. Prepare the Cake:
    • Preheat your oven to 325°F (165°C). Grease a bundt or loaf pan thoroughly.
    • In a medium mixing bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt. Set aside.
    • In a large mixing bowl, beat the softened butter and powdered sweetener until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract and sour cream until smooth.
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
