Instructions:
- In a large mixing bowl, combine the almond flour, cocoa powder, powdered sweetener, and a pinch of salt. Mix well to combine all the dry ingredients.
- Add the almond butter, melted coconut oil, and vanilla extract to the dry ingredients. Mix thoroughly until a thick and uniform mixture forms. If the mixture seems too dry, you can add a bit more melted coconut oil.
- If you’re adding any optional ingredients like chopped nuts or sugar-free chocolate chips, fold them into the mixture.
- Line a baking dish or pan with parchment paper, leaving some overhang on the sides for easy removal.
- Transfer the mixture into the prepared baking dish and press it down firmly to create an even layer. Use the back of a spoon or your hands to compact the mixture.
- Place the baking dish in the refrigerator to chill and set. This typically takes about 1-2 hours.
- Once the mixture has set, remove the baking dish from the refrigerator and use the parchment paper overhang to lift the slab of bars out of the dish.
- Place the slab on a cutting board and use a sharp knife to cut it into bars of your desired size.
- Store the keto no-bake chocolate oat bars in an airtight container in the refrigerator. Due to the coconut oil content, they might soften at room temperature.
