Ingredients:

For the Chicken:

  • 4 bone-in, skin-on chicken pieces (such as thighs or drumsticks)

For the Coating:

  • 1 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

For the Egg Wash:

  • 2 large eggs
  • 2 tablespoons heavy cream or almond milk

For Frying:

  • Cooking oil with a high smoke point (such as avocado oil, coconut oil, or lard)

Instructions:

  1. Preheat your frying oil in a deep skillet or pot to around 350°F (175°C). Make sure you have enough oil to submerge the chicken pieces.
  2. Season the chicken pieces with salt and pepper.
  3. In a shallow bowl, whisk together the almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and pepper to create the coating mixture.
  4. In another bowl, beat the eggs and mix in the heavy cream or almond milk to create the egg wash.
  5. Dip each chicken piece into the egg wash, allowing any excess to drip off, then coat it thoroughly with the almond flour mixture. Press the coating onto the chicken to ensure it adheres well.
  6. Carefully place the coated chicken pieces into the hot oil, skin-side down. Be cautious not to overcrowd the pan; fry in batches if necessary.
  7. Fry the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the coating is golden brown and crispy. The cooking time may vary based on the size of your chicken pieces.
  8. Once cooked, remove the chicken from the oil and place them on a wire rack or paper towels to drain any excess oil.
