Ingredients:

1 cup natural peanut butter (unsweetened)
1/2 cup coconut oil
1/4 cup unsweetened cocoa powder
1/4 cup powdered erythritol or any other keto-friendly sweetener (adjust to taste)
1 tsp vanilla extract
A pinch of salt (optional)
Chopped peanuts for topping (optional)
Instructions:

In a microwave-safe bowl or on the stovetop, melt the coconut oil and peanut butter together until they are well combined. You can do this by heating them in short increments in the microwave or over low heat on the stovetop, stirring frequently.

Once the peanut butter and coconut oil are fully melted and mixed, add in the unsweetened cocoa powder, powdered erythritol (or your preferred keto sweetener), vanilla extract, and a pinch of salt if desired. Stir until the mixture is smooth and all the ingredients are well incorporated.

Taste the mixture and adjust the sweetness according to your preference by adding more sweetener if needed.

Pour the mixture into a parchment paper-lined 8×8 inch (20×20 cm) square pan or a similar-sized container. Smooth the top with a spatula.

If desired, sprinkle chopped peanuts on top for extra texture and flavor.

Place the pan in the refrigerator and let it chill for at least 1-2 hours, or until the fudge has hardened.

Once the fudge has set, remove it from the pan and cut it into small squares or rectangles.
