Ingredients:
2 tbsp unsweetened peanut butter (or almond butter for variation)
1 large egg
1 ½ tbsp almond flour
1 tbsp powdered erythritol (or your preferred keto sweetener)
½ tsp baking powder
½ tsp vanilla extract (optional)
1 tbsp sugar-free chocolate chips (optional)

Instructions:
Prepare the Batter:
In a microwave-safe mug, whisk together the egg and peanut butter until smooth.
Add almond flour, sweetener, baking powder, and vanilla extract (if using). Mix until well combined.
Stir in chocolate chips if desired.
Cook the Mug Cake:
Microwave on high for 60-90 seconds. Start checking at the 60-second mark to avoid overcooking. The cake is done when it’s set in the center and pulls away from the mug sides slightly.

Cool and Serve:
Let the mug cake cool for 1-2 minutes before digging in. Optionally, top with a dollop of whipped cream or a sprinkle of sugar-free chocolate chips.
