Ingredients:
For the Meatballs:
- 1 lb ground beef
- 1/2 lb ground pork
- 1/4 cup almond flour or coconut flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated mozzarella cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 tsp Italian seasoning
- Salt and pepper to taste
For the Sauce:
- 1 1/2 cups sugar-free marinara sauce
- 1/4 cup water
- 1 tsp erythritol or another keto-friendly sweetener (adjust to taste)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Crushed red pepper flakes (optional, for heat)
Instructions:
- In a large mixing bowl, combine all the meatball ingredients. Mix well until everything is thoroughly combined.
- Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should get around 24 meatballs.
- In a separate bowl, mix together the sauce ingredients: sugar-free marinara sauce, water, erythritol (or sweetener of your choice), Italian seasoning, salt, and pepper. Add crushed red pepper flakes if you prefer some heat.
- Place the meatballs in the bottom of your slow cooker and pour the sauce over them, ensuring the meatballs are well coated.
- Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours. The meatballs should be fully cooked and tender when done.
- Serve the meatballs with toothpicks for a party-friendly appetizer, or over zucchini noodles, cauliflower rice, or another low-carb side dish for a full meal.
