Keto Slow Cooker Party Meatballs

Ingredients:

For the Meatballs:

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/4 cup almond flour or coconut flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

For the Sauce:

  • 1 1/2 cups sugar-free marinara sauce
  • 1/4 cup water
  • 1 tsp erythritol or another keto-friendly sweetener (adjust to taste)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional, for heat)

Instructions:

  1. In a large mixing bowl, combine all the meatball ingredients. Mix well until everything is thoroughly combined.
  2. Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should get around 24 meatballs.
  3. In a separate bowl, mix together the sauce ingredients: sugar-free marinara sauce, water, erythritol (or sweetener of your choice), Italian seasoning, salt, and pepper. Add crushed red pepper flakes if you prefer some heat.
  4. Place the meatballs in the bottom of your slow cooker and pour the sauce over them, ensuring the meatballs are well coated.
  5. Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours. The meatballs should be fully cooked and tender when done.
  6. Serve the meatballs with toothpicks for a party-friendly appetizer, or over zucchini noodles, cauliflower rice, or another low-carb side dish for a full meal.
