Keto Strawberry Cream Cheese Cookies
Ingredients:
- 4 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated erythritol or sweetener of choice
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup freeze-dried strawberries, crushed into small pieces

Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, beat together the softened cream cheese, butter, and sweetener until smooth and creamy.
- Add the egg and vanilla extract to the cream cheese mixture, and beat until well combined.
- In a separate bowl, whisk together the almond flour, coconut flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Gently fold in the crushed freeze-dried strawberries until evenly distributed throughout the dough.
- Using a cookie scoop or spoon, scoop out dough and roll into balls. Place the balls onto the prepared baking sheet, leaving some space between each cookie.
- Use a fork to gently flatten each cookie slightly.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
