Ingredients:

  • 1 cup shredded mozzarella cheese (divided)
  • 1 large egg
  • 2 garlic cloves, minced
  • 2 tbsp fresh basil or parsley, chopped
  • Salt and pepper, to taste

  • 1 cup sugar-free marinara sauce

Instructions:

  1. Prepare the Zucchini:
    • Preheat your oven to 375°F (190°C).
    • Slice the zucchinis lengthwise into thin strips (about 1/8 inch thick) using a mandoline slicer or a sharp knife.
    • Brush the slices lightly with olive oil and season with salt and pepper.
    • Lay the slices on a parchment-lined baking sheet and bake for 5–7 minutes until slightly softened. Remove from the oven and let cool.
