Keto Sweetened Condensed Milk Bread
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup golden flaxseed meal
- 1/4 cup granulated erythritol (or any keto-friendly sweetener)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted unsalted butter
- 1/4 cup keto sweetened condensed milk (you can make your own by reducing heavy cream and sweetener over low heat until thickened)
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the almond flour, coconut flour, flaxseed meal, erythritol, baking powder, and salt. Mix well to combine.
- In another bowl, whisk together the eggs, almond milk, melted butter, keto sweetened condensed milk, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined and you have a smooth batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 40-45 minutes, or until the bread is golden brown on top and a toothpick inserted into the center comes out clean.
- Remove from the oven and let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
