Lemon Garlic Butter Shrimp with Asparagus

Lemon Garlic Butter Shrimp with Asparagus

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoons butter (or vegan butter for a dairy-free version)
  • 3 cloves garlic, minced
  • Juice of 1 lemon (plus lemon zest for garnish)
  • 1 teaspoon lemon zest (optional, for extra flavor)
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Prepare the Asparagus: Trim the woody ends off the asparagus and cut them into 2-inch pieces. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the asparagus pieces and sauté for 4-5 minutes, or until they are tender-crisp. Remove them from the skillet and set them aside.
  2. Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil. Season the shrimp with salt and pepper. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until they turn pink and opaque. Be careful not to overcook them.
  3. Make the Garlic Butter Sauce: Once the shrimp are cooked, add the butter to the skillet and let it melt. Add the minced garlic and cook for 1-2 minutes, stirring constantly, until the garlic becomes fragrant and golden. If you like a little heat, sprinkle in the red pepper flakes.
  4. Combine the Shrimp and Asparagus: Return the cooked asparagus to the skillet and toss it with the shrimp in the garlic butter sauce. Add the lemon juice and lemon zest (if using) and stir to combine. Let everything cook together for another minute to warm through.
  5. Garnish and Serve: Remove from heat and garnish with fresh chopped parsley and additional lemon wedges on the side. Serve immediately with a side of rice, quinoa, or a simple salad.

Tips:

  • Shrimp Tips: Make sure the shrimp are not overcooked, as they can become tough. When shrimp turn pink and opaque, they are done.
  • Add More Vegetables: Feel free to add other vegetables like cherry tomatoes, bell peppers, or spinach for extra color and nutrition.
  • Make it Spicy: If you love spice, add a bit more red pepper flakes or even a pinch of cayenne pepper to the garlic butter sauce.
