Lentil balls with gravy over some brown rice with parsley

Lentil balls:
1/2 cup of dried lentils
Grapeseed oil (or any oil you prefer)
Onion
Garlic
Thyme
Smoked paprika
Mrs. Dash onion and herb blend
Garlic powder
Onion powder
2 drops of liquid smoke
2 teaspoons of coconut aminos (this is sweet, but if you prefer no sweetness, use liquid aminos instead)
2 tablespoons of oat flour
2 tablespoons of ground flax seed
2 cups of water or vegetable broth (I used water)
Gravy (I came up with this on the spot):
3 tablespoons chickpea flour
1 1/2 cups of water
1/2 of nut milk (I used almond)
Paprika
Salt
Black Pepper
Turmeric
Mrs. Dash onion and herb blend
Garlic powder
Onion powder
Directions:
Lentil balls:
Preheat your oven to 350 degrees.
Heat your oil in a pan over a medium-high heat. Add the chopped onion and let it cook for a few minutes. Then, add your garlic, thyme, smoked paprika, parsley, and lentils.
Add your water and bring it to a boil. Reduce the heat to let it simmer, cover the pot, and cook for about 30 minutes until the lentils are tender (not soggy) and all the water has evaporated.
Once finished, add the lentils to a bowl along with the oat flour, ground flax, coconut aminos (or liquid aminos), smoked paprika, 2 drops of liquid smoke, Mrs. Dash onion and garlic blend, garlic powder, onion powder, and salt.
Form the mixture into balls and place them on a baking sheet with parchment paper. Cook until brown on both sides.
Gravy:
In a bowl, add 3 tablespoons of chickpea flour and 1 1/2 cups of water. Whisk until there are no lumps.
In a pan, add you oil along with some slices of onions. Cook down with some paprika, salt, black pepper, turmeric, garlic powder, onion powder, and Mrs. Dash onion and herb blend. Add your chickpea flour mixture to the pan slowly and continuously stir it so it will not stick. Then, add 1/2 cup of nut milk (I used almond). It will be thick, but you can add more water as needed for the consistency that you want.
Add your lentil balls to the gravy and let it cook for about 5-7 minutes.
Green beans:
For the green beans, I just added some chopped garlic, smoked paprika, 3 drops of liquid smoke, salt, and grapeseed oil. I put this in a pan and baked it for about 20-25 mins.
Rice:
Brown rice with dried parsley and salt.
