Vegan recipe for Soy and Ginger Bok Choy

Ingredients:
1 lb bok choy, cleaned and trimmed
1 tbsp olive oil
2 garlic cloves, minced
1-inch piece of ginger, peeled and minced
2 tbsp soy sauce
1 tbsp maple syrup
1 tsp rice vinegar
1/4 tsp red pepper flakes (optional)
Salt and pepper to taste
Sesame seeds for garnish (optional)
Instructions:
Heat the olive oil in a large skillet over medium-high heat.
Add the minced garlic and ginger, and sauté for 1-2 minutes, until fragrant.
Add the bok choy to the skillet and cook for 3-4 minutes, stirring occasionally.
In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, and red pepper flakes (if using).
Pour the soy sauce mixture over the bok choy and toss to coat evenly.
Cook for an additional 1-2 minutes, until the bok choy is tender but still has some crunch.
Season with salt and pepper to taste.
Garnish with sesame seeds (if using) and serve immediately.
