Lentil Soup

Ingredients
1 small onion
1 carrot
Celery
1 cup lentils, rinsed
Couple gloves of garlic
2 large handfuls spinach
1 lg tomato
1 lg sweet potato/regular potato optional
Tomato paste 1 tbsp optional
4-6 cups of water or vegetable broth
I don’t measure spices, but here’s what I use
Salt & pepper
Tumeric
Cumin
Paprika
Cayenne – if you like it spicy if not, omit
Curry spice
Oregano
Parsley
Garlic/onion powder
Little ground ginger
Little cinnamon
Sautée celery onions garlic and carrots (and potatoes if using) til soft. Add tomatoes. Season with spices. Cook for a min or two stirring to distribute spices well. If using tomato paste add now and cook a min or two. Add lentils. Cook a few mins. Add a little water or broth to pan, scraping up bits of seasonings. Add the rest of water/broth. Bring to boil, turn down and simmer about 20-30 mins until lentils are soft.
Turn off heat. Add spinach. Cover and let sit five mins until spinach is soft. Stir and serve!
