Loaded Vegan Nachos
RECIPE:
The beans:
1-2 cans of 3 bean mix pinto/blackbean/ red kidney beans rinsed then put into a saucepan with some diced onion, crushed garlic, a spoon or 2 of concentrated tomato paste, 2 tsp cumin, 1 tsp ground coriander, 1 tsp paprika, 1 tsp oregano, salt + pepper to taste, then add enough water to be able to simmer it, till thickens for about 30 minutes.
The cheeze sauce:
1 cup unsalted cashews
1/4 – 1/2 tsp salt
1/4 tsp garlic powder
Juice of half a lemon
2 heaped TBSP of nutritional yeast
Blend in a high speed blender with a bit of water till smooth.
Fresh Salsa:
Diced red onion
Diced tomatoes
Diced red capsicum (optional)
Chopped coriander
Fresh lime juice
Guacamole: mashed avocado, lime juice, crushed garlic, salt pepper to taste
Served with :
Corn chips
Pickled jalapenos
Sweet potato 🥔 just roasted whole with olive oil in the oven for about an hour, slice open and scoop out the goodness for an extra healthy ingredient to top with all the toppings!
It sounds like allot but it’s so easy I always have all these ingredients on hand as I make this every week and it’s our favorite meal ❤️
