LOW CARB BROCCOLI SALAD WITH BACON
Ingredients:
- 4 cups fresh broccoli florets
- 6 slices bacon, cooked and crumbled
- 1/4 cup red onion, finely chopped
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon granulated sweetener (such as erythritol or stevia)
- Salt and pepper to taste

Instructions:
- Begin by cooking the bacon until it’s crispy. You can either cook it on the stovetop or bake it in the oven. Once cooked, crumble the bacon into small pieces and set aside.
- Prepare the broccoli by washing it thoroughly and cutting it into bite-sized florets. You can also include some of the tender parts of the stems if desired.
- In a large mixing bowl, combine the broccoli florets, crumbled bacon, chopped red onion, and shredded cheddar cheese (if using). Toss everything together until well combined.
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, and granulated sweetener until smooth. You can adjust the amount of sweetener to your taste preferences.
- Pour the dressing over the broccoli mixture and toss until all the ingredients are evenly coated.
- Season the salad with salt and pepper to taste.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
