Mexican pizzas

Ingredients:

  1. 4 large flour tortillas (or you can use corn tortillas for a more authentic touch)
  2. 1 pound ground beef or ground turkey
  3. 1 packet of taco seasoning or your own mix of spices (cumin, chili powder, paprika, etc.)
  4. 1 can (15 ounces) refried beans
  5. 1 cup shredded cheese (usually a Mexican blend or cheddar)
  6. 1 cup diced tomatoes
  7. 1/2 cup sliced black olives
  8. 1/4 cup diced green onions
  9. Sour cream, salsa, and guacamole for garnish
  10. Cooking oil for frying the tortillas

Instructions:

  1. In a skillet, cook the ground beef or turkey over medium heat until browned, breaking it into small pieces as it cooks. Drain any excess fat and add the taco seasoning (or your own mix) along with some water, following the seasoning packet’s instructions. Let it simmer for a few minutes until the mixture thickens. Set aside.
  2. Heat the refried beans in a saucepan until they are warmed through. You can add a little water to make them more spreadable if needed.
  3. In a separate pan, heat some cooking oil over medium-high heat. When it’s hot, add a tortilla, and fry it on one side until it’s crispy and lightly browned (usually 2-3 minutes). Flip the tortilla and cook the other side. Remove and drain on paper towels. Repeat with the remaining tortillas.
  4. To assemble the Mexican pizzas, spread a layer of refried beans on each tortilla, followed by the seasoned ground beef or turkey. Sprinkle cheese over the meat, and then add diced tomatoes, black olives, and green onions.
  5. Place the assembled Mexican pizzas under the broiler in your oven or in a preheated oven at 400°F (200°C) until the cheese is melted and bubbly, usually just a few minutes.
  6. Once the cheese is melted and the toppings are hot, remove the Mexican pizzas from the oven.
  7. Serve the Mexican pizzas hot, and garnish with sour cream, salsa, and guacamole as desired.
