One Point Peanut Butter Cookies

Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup powdered peanut butter
  • 1/4 cup granulated sugar substitute (like erythritol or stevia)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the rolled oats, powdered peanut butter, sugar substitute, salt, and baking soda.
  3. In a separate bowl, whisk together the applesauce, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Use the back of a fork to flatten each cookie and create a crisscross pattern on top.
  7. Bake in the preheated oven for 8-10 minutes or until the edges are golden brown.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, store the cookies in an airtight container.
