Ingredients:
- 1 cup old-fashioned rolled oats
- 1/2 cup unsweetened applesauce
- 1/2 cup powdered peanut butter
- 1/4 cup granulated sugar substitute (like erythritol or stevia)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the rolled oats, powdered peanut butter, sugar substitute, salt, and baking soda.
- In a separate bowl, whisk together the applesauce, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Use the back of a fork to flatten each cookie and create a crisscross pattern on top.
- Bake in the preheated oven for 8-10 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, store the cookies in an airtight container.
