°1 pound smoked turkey sausage, sliced
°1 large onion, peeled and chopped
°6 small red potatoes
°6 small golden potatoes
°1 tablespoon of olive oil
°1/2 teaspoon fine sea salt
°1/2 teaspoon freshly ground black pepper
°1 teaspoon smoked paprika
°1 teaspoon Cajun seasoning
*How to make:
Preheat oven to 400.
Line a large baking sheet with tin foil and spray with cooking spray.
Cut the turkey sausage into large pieces.
Cut the onion into large pieces.
Wash and dry the potatoes.
Cut the small potatoes in half.
In a large bowl, add sausage, onion, and baby potatoes.
Drizzle the sausage mixture with the olive oil and toss to coat.
In a small bowl, add all the spices and stir to combine.
Sprinkle sausage mixture with spice mixture.
mix to coat.
Pour it onto the baking tray, evenly distributing the sausage and potatoes.
Put them in the pan in the oven and bake for 55 minutes.
Test the potatoes by inserting a fork into them to make sure they are soft and fully cooked.
If not, cook it for another 5 minutes.
