PIONEER WOMANS APPLE DUMPLINGS

Ingredients:

  • 2 Granny Smith apples
  • 2 cans (8 oz each) crescent roll dough
  • 1 cup (2 sticks) unsalted butter
  • 1½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 can (12 oz) lemon-lime soda (such as Sprite or 7-Up)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Peel and core the apples, then cut them into 8 equal slices. Set aside.
  3. Unroll the crescent roll dough and separate it into individual triangles.
  4. Place one apple slice on the wide end of each triangle, then roll it up tightly, starting from the wide end and tucking in the sides as you go. Repeat with all the apple slices.
  5. In a saucepan, melt the butter over medium heat. Add the sugar, vanilla extract, and cinnamon, stirring until the sugar is dissolved and the mixture is well combined. Remove from heat.
  6. Grease a 9×13-inch baking dish with butter or cooking spray.
  7. Place the rolled-up apple dumplings in the greased baking dish, arranging them in a single layer.
  8. Pour the butter-sugar mixture over the dumplings, making sure to coat them evenly.
  9. Pour the lemon-lime soda around the edges of the baking dish, not over the dumplings.
  10. Bake in the preheated oven for 35 to 40 minutes, or until the dumplings are golden brown and the sauce is bubbly.
  11. Remove from the oven and let the dumplings cool for a few minutes.
  12. Serve warm, spooning some of the sauce from the baking dish over each dumpling.
