Ingredients
Chopped spinach ๐Ÿƒ
Quinoa ๐Ÿš
Black olives ๐Ÿซ’
Fire roasted corn ๐ŸŒฝ
Black beans
Cucumbers ๐Ÿฅ’
Tomatoes ๐Ÿ…
And Iโ€™ll top with avocado ๐Ÿฅ‘ and dairy free ranch when I eat em. This will keep the avocado from browning and the salad from getting soggy.
I did intentionally stack and layer these so they stay fresh and intact. Veggies with a higher water content on bottom.
**edit I CRAM the spinachโ€ฆ thereโ€™s a little over 2 cups of chopped spinach at the top.
** 2nd editโ€ฆ I pour it into a bowl, and only store in the jar, because I also add avocado, sunflower seeds, and dressing after the fact
