Ingredients
2 cup quick oats
2 tsp. Pumpkin spice
1 tsp. Baking powder
1/4 tsp. Salt
1 cup pumpkin purée
1 1/4 cup unsweetened almond milk or choice
2 eggs
2 tsp. Vanilla extract
1/2 cup Lilys Chocolate chips
Instructions
Preheat the oven to 375 degrees. Prepare a 8×8 baking dish with cooking spray. In a medium bowl, combine oats, pumpkin pie spice, baking powder, and salt. Mix to combine. Add pumpkin puree, milk, eggs, vanilla, to bowl. Stir to combine. Fold in chocolate chips and save a few to sprinkle on Top.
Add the mix to the prepared baking dish. Bake for 30-35 minutes. Let cool for 5 minutes before slicing. Enjoy!
