Ingredients:

For the Taco Boats:

  • 4 large flour tortillas (burrito-sized)
  • Cooking spray

For the Quiche Filling:

  • 6 large eggs
  • 1/2 cup milk
  • 1 cup cooked ground beef or ground turkey
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Start by preparing the taco boats. Heat the flour tortillas in the microwave for about 15 seconds to make them pliable. This will make it easier to shape them into boat-like forms.
  3. Gently press each tortilla into a cupcake or muffin tin to create a boat shape. Make sure the edges of the tortilla are slightly folded to hold the filling.
  4. Lightly spray the inside of each tortilla boat with cooking spray. This will help prevent them from becoming too soggy.
  5. In a large mixing bowl, whisk together the eggs and milk until well combined. Season with a pinch of salt and pepper.
  6. Add the cooked ground beef or turkey to the egg mixture and stir to combine.
  7. Stir in the shredded cheddar cheese, diced bell peppers, diced onions, diced tomatoes, chopped cilantro, chili powder, and cumin. Mix until all ingredients are evenly distributed.
  8. Carefully spoon the quiche filling mixture into each tortilla boat, dividing it equally among them.
  9. Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the quiche filling is set and the edges of the tortilla boats are golden brown.
  10. Remove the quiche taco boats from the oven and let them cool slightly before serving.
