Seitan sausage

Ingredients
About 1/3 tofu cube (firm)
1 cup vial wheat gluten
1/4 cup nutritional yeast (optional)
About 2/3 cup water
1 Tsp onion powder
1 Tsp garlic powder
1 Tsp of salt or to taste
Dash of coarse black pepper
Combine water, tofu, and roasted red pepper to a blender or food processor. Blend. Set aside.
In a bowl mix, nutritional yeast, vial wheat gluten, and seasonings.
Add wet ingredients to the dry and knead for 3 to 5 minutes and set aside to rest for 15 minutes.
Roll out or pat dough out, cut into strips, roll up in logs with foil, and stream in basket or stacked on trivet in Instant pot for 15 minutes.)
Allow to cool.
**Just change out seasoning to make different flavors. **
For italian sausage add:
1/4 cup Roasted red pepper
2 tsp Italian seasoning (I use great value from Wal-Mart)
For flavorful spicy sausage add:
1 tsp paprika
1/2 cayenne pepper
1/2 Tbs crushed red pepper
1 Tbs Sriracha or chili garlic sauce
Other flavor options:
-crushed dried apple & sage
-1 to 2 Tbs curry powder
-1 Tbs vegan chicken/beef flavor
**This recipe is kinda a base that you could make into anything, like nuggets, breast, or whatever.
