WW Shrimp Fajitas

Ingredients:

For the Marinade:

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 3 tablespoons lime juice (about 2 limes)
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

For the Fajitas:

  • 2 bell peppers (any color), thinly sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro, lime wedges

Instructions:

  1. In a bowl, whisk together the olive oil, lime juice, minced garlic, chili powder, cumin, paprika, oregano, salt, and pepper to make the marinade.
  2. Place the shrimp in a resealable plastic bag or a shallow dish and pour the marinade over them. Toss to coat the shrimp evenly. Seal the bag or cover the dish and refrigerate for at least 30 minutes to marinate.
  3. While the shrimp are marinating, heat a large skillet or a grill pan over medium-high heat. Add 2 tablespoons of olive oil.
  4. Add the sliced bell peppers and onions to the skillet. Cook for about 5-7 minutes, or until they are slightly softened and have some color. Season with salt and pepper to taste. Remove them from the skillet and set aside.
  5. In the same skillet, add the marinated shrimp along with the marinade. Cook for about 2-3 minutes on each side, or until they turn pink and opaque.
  6. Return the cooked peppers and onions to the skillet with the shrimp. Toss everything together for about a minute to combine and heat through.
  7. Warm the tortillas in a dry skillet or microwave according to the package instructions.
  8. Serve the shrimp and vegetable mixture in the warm tortillas. Add your choice of optional toppings such as sour cream, guacamole, salsa, chopped cilantro, and a squeeze of lime juice.
