Simple Vegan Black Bean Brownie

INGREDIENTS:
1 can (15 oz) black beans, drained and rinsed
1/2 cup cocoa powder
1/2 cup maple syrup or agave syrup
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Pinch of salt
Optional: vegan chocolate chips, chopped nuts, or shredded coconut for topping
INSTRUCTIONS:
Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch baking pan with parchment paper.
In a food processor or blender, combine the black beans, cocoa powder, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt. Blend until smooth and well combined, scraping down the sides as needed.
Pour the batter into the prepared baking pan and spread it out evenly.
If desired, sprinkle vegan chocolate chips, chopped nuts, or shredded coconut on top of the batter.
Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out mostly clean
