Smoky Mac & Cheese

Ingredients
-16 oz. cooked elbow macaroni
-1 1/4 cup Nutritional yeast
-1 tbsp or more to taste of any seasoning (Slap yo mama, Old bay, Creole, etc.)
-3 cups (plain unsweetened cashew or soy milk)
-1 tsp minced garlic
-1 tsp smoked paprika
-1 1/2 cup oil (I used canola)
-1 tsp or more to taste of sea salt
-4-5 Slices of vegan smoked cheese (I used Follow Your Heart Smoked gouda)
-smoked paprika & dried parsley for garnish
Preheat the oven to 350 degrees.
In a blender or food processor, blend the nutritional yeast, seasoning, salt, milk, garlic & paprika. Add the oil & blend again until mixed.
Mix the cooked pasta with the “cheese” sauce in an oven casserole dish. Break slices of vegan smoked cheese into smaller pieces & stir into mix. Add salt to taste if needed.
Sprinkle with smoked paprika & dried parsley & cook in the oven for 25 minutes or until golden brown. Remove from the oven & let stand for 20 minutes before serving
