Southern Fried Chicken Gizzards

Ingredients:

  • 1 pound chicken gizzards
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Vegetable oil for frying

Instructions:

  1. Rinse the chicken gizzards under cold water and trim off any excess fat or gristle. Cut them into small bite-sized pieces.
  2. Place the chicken gizzards in a bowl and pour the buttermilk over them. Stir to ensure all the gizzards are coated in the buttermilk. Let them marinate for at least 30 minutes, or up to overnight in the refrigerator.
  3. In a separate bowl, combine the all-purpose flour, salt, black pepper, paprika, garlic powder, and onion powder. Mix well to create the seasoned flour mixture.
  4. Heat vegetable oil in a deep skillet or Dutch oven to a temperature of 350°F (175°C).
  5. Take each marinated chicken gizzard piece from the buttermilk, allowing any excess liquid to drip off, and then dredge it in the seasoned flour mixture. Ensure the gizzard is thoroughly coated with the flour mixture.
  6. Carefully place the coated chicken gizzards into the hot oil, a few pieces at a time, making sure not to overcrowd the skillet. Fry the gizzards for about 5-6 minutes, or until they are golden brown and crispy.
  7. Use a slotted spoon or tongs to remove the fried gizzards from the oil and transfer them to a paper towel-lined plate to drain excess oil. Repeat the frying process with the remaining coated gizzards.
  8. Serve the Southern fried chicken gizzards hot as a main dish or as a flavorful appetizer. They can be enjoyed on their own or served with your favorite dipping sauce or alongside other soul food classics like collard greens or macaroni and cheese.
