Stuffed Cabbages Rolls

Stuffed Cabbages Rolls

For the Cabbage Rolls:

  • 1 large head of cabbage
  • 1 pound ground beef or ground turkey
  • 1/2 pound ground pork
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup riced cauliflower
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1/4 cup tomato paste
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup beef or vegetable broth

For the Sauce:

  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • Salt and pepper to taste

  1. Preheat your oven to 350°F (175°C).
  2. Bring a large pot of water to a boil. Carefully remove the core of the cabbage, and place the whole cabbage into the boiling water for about 3-4 minutes. This will soften the leaves and make them easier to work with. Remove the cabbage from the water and allow it to cool.
  3. In a large skillet, cook the ground beef (or turkey) and ground pork over medium-high heat until browned. Add the chopped onion and minced garlic and sauté for a few minutes until they become soft.
  4. Stir in the riced cauliflower, diced tomatoes, tomato paste, dried oregano, salt, and pepper. Cook for a few minutes until the mixture is well combined.
  5. Carefully remove the leaves from the cabbage, and cut away the thick vein from each leaf to make them easier to roll.
  6. Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides to create a neat roll. Place the rolls seam-side down in a baking dish.
  7. In a separate bowl, mix the ingredients for the sauce: diced tomatoes, tomato paste, dried basil, salt, and pepper. Pour the sauce over the cabbage rolls in the baking dish.
  8. Pour the beef or vegetable broth into the baking dish around the cabbage rolls. This helps keep the rolls moist and flavorful.
  9. Cover the baking dish with foil and bake for about 1 hour.
  10. Remove the foil and bake for an additional 15-20 minutes, or until the cabbage rolls are tender and the sauce is bubbling.
  11. Serve the keto stuffed cabbage rolls hot, garnished with fresh herbs if desired.
