Stuffed Pepper Casserole

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 cup cooked brown rice
  • 1 onion, finely chopped
  • 2 bell peppers, diced (use a mix of colors)
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup reduced-fat shredded cheddar cheese

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Ground Turkey:
    • In a large skillet, cook the lean ground turkey or chicken over medium heat until browned. Drain any excess fat.
  3. Add Vegetables:
    • Add chopped onion and diced bell peppers to the skillet. Cook for 5-7 minutes, or until vegetables are softened.
  4. Season:
    • Stir in diced tomatoes (with their juice), tomato sauce, dried oregano, dried basil, garlic powder, salt, and pepper. Let it simmer for 5 minutes.
  5. Combine with Rice:
    • Add the cooked brown rice to the skillet and mix everything together.
  6. Transfer to Casserole Dish:
    • Transfer the mixture to a greased casserole dish.
  7. Top with Cheese:
    • Sprinkle the reduced-fat shredded cheddar cheese evenly over the top.
  8. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Serve:
    • Allow the casserole to cool slightly before serving.
