Stuffed Peppers

Ingredients
6 peppers
1 pack of Trader Joe’s meatless crumbles
1 Can of diced tomatoes
1 med onion diced
3 cloves of garlic
1 bag frozen cauliflower rice
A1 sauce (for meatiness flavor)
Soy sauce
Cumin
Paprika
1/4 teaspoon honey
1/4 teaspoon liquid smoke
S + P to taste.
Cut tops off and clean inside peppers, rub with olive oil salt and pepper. I put a little water in the bottom of the baking dish, maybe 1/3 of a cup. Bake for 20 mins covered.
Sautéed onion and garlic in olive oil for 3 to 4 mins, add meatless crumbs continue to sauté. I turn the heat up a bit because I like to get color on the crumbs.
Add liquid smoke, A1, paprika, cumin, S+P, honey, and can of tomatoes. Cook together until it’s a thick “meat sauce”
Removed peppers from oven. Fill peppers with frozen cauliflower rice ( I don’t cook the rice beforehand because it’ll turn to even more of a mush.) add meat mixture on top of rice and put back in oven uncovered.
Broil for about 7-8 mins to get a bit of browning on top and on the sides. Be sure to watch it while it’s on broil of course.
